Position Overview

As Executive Sous Chef, you will play a key leadership role in the day‑to‑day culinary operation of Lucia Marbella. You will oversee service execution, ensuring the highest standards of food quality, presentation, consistency, and food safety while leading the kitchen brigade to deliver exceptional dining experiences that embody the Lucia Restaurant lifestyle.

Working closely with the Executive Chef, you will be a hands‑on leader who inspires the team, drives operational excellence, manages costs, and ensures flawless execution across daily service, VIP experiences, and special events.

Key Responsibilities

Support the overall management of the kitchen operation.

Oversee the daily performance of all kitchen sections.

Lead, motivate, coach, and develop chefs, Chef de Parties, Commis Chefs, and apprentices.

Coordinate food preparation and production while maintaining consistency, quality, and presentation.

Assist in developing new menus, recipes, and seasonal culinary concepts.

Ensure all dishes meet Lucia Restaurant's culinary and presentation standards.

Monitor inventory, purchasing, receiving, and storage procedures.

Support supplier management and purchasing negotiations.

Control food costs through recipe management, portion control, and waste reduction.

Ensure full compliance with HACCP, food hygiene, and health & safety regulations.

Prepare staff schedules according to operational demands.

Continuously train the kitchen team on culinary techniques, procedures, and brand standards.

Conduct performance reviews and support employee development.

Collaborate closely with Restaurant, Purchasing, and Events teams to ensure seamless operations.

Handle service challenges quickly and effectively while maintaining guest satisfaction.

Participate in operational planning and management meetings.

Support the execution of private events, VIP experiences, and special activations.

Drive continuous improvement initiatives focused on quality, efficiency, and productivity.

What We're Looking For

Proven experience leading multicultural kitchen teams in high-volume luxury hospitality environments.

Ability to perform under pressure while maintaining exceptional culinary standards.

Strong organizational, planning, and time management skills.

Hands‑on leadership style with excellent attention to detail.

Creative culinary mindset combined with strong commercial awareness.

Excellent communication and team leadership abilities.

Passion for delivering exceptional guest experiences.

Up‑to‑date knowledge of international culinary trends, techniques, and best practices.

Strong understanding of food cost control, inventory management, and kitchen financial performance.

HACCP and food safety certification is highly desirable.
